My first Give Away!



So my friend Katie posted this on her blog and I responded so that means I need to have a give away. This will be first give away ever. I am so excited. Now just like Katie:

I am a little nervous because I don’t really think anyone reads my blog. Which is my own fault because between this pregnancy, my two kids, my husband, MOPS, work, etc. I really don’t have much time to do much with it.  I hope to change that really soon. Menu Plan for the week of February 7-14


Menu Plan
This week I am still trying to figure out as far as a menu goes. We will see how things go. For those of you who read my blog and don't know me; I am 15 weeks pregnant with my third child and my other two children are not quite three and 18 months old. It will be a little chaotic around here to say the least. We are excited about the baby, but I am not a very good pregnant person. I just haven't felt like me since I was pregnant with Big A over three years ago. :( Pregnancy also makes meal planning a little more difficult since I am usually not in the mood for what I plan to cook. :)

Meal Plan
Sunday: Grilled fish, chicken rice and artichokes
Monday: MIL cooking SURPRISE
Tuesday: Leftovers from Monday night (Yeah! Two nights of no cooking)
Wednesday: Soup and Salad
Thursday: Mexican either enchiladas or quesadillas with a veggie
Friday: Homemade salmon pizza and salad
Saturday: Valentine's Day supposed to go out. :)

Itty Bitty Dots Papertrey Inc. Ribbon Challenge


This is a card I did for the Papertrey Inc challenge. I had fun doing it, but didn't have much light in my craft space due to three blown light bulbs. I need to replace those tomorrow ASAP. It is a simple card that uses scraps from my collection. I tried to tie in the dot part with the pink Brazil Basics cardstock strip and then the blue ribbon actually has polka dots on it. I didn't realize I had so little time for this challenge, but I am glad that even in my pregnancy state I was able to do it. :)

Meal Plan: First Week of 2009


Well here is my menu plan. I guess late is better than never this week. I am still struggling with how to cook healthy, simple, frugal meals for my family. I have been researching buying local produce, dairy and meats lately. I will write another post on that, but this is one of my hot topics for the moment. It is not as easy as you would think to know exactly where your food comes from. If you are buying locally please leave me a comment with any tips for me as I try to provide local foods for my family.

Menu Plan

M: Open faced Cheeseburgers on homemade bread, salad, sweet potato fries
T: Chicken cacciatore over brown rice *this is a wonderful almost one pot meal where the veggies are in the main dish so no side dishes
W: Make your own cornmeal crusted pizzas, loaded with veggies
TH: Frozen Meal (this is my third day on at work…I need a little reprieve)
F: Homemade soup, salad and bread
S: Hubby is cooking (I am going out with the girls to celebrate a friend’s birthday)
S: Main Course will be some sort of salad with chicken thrown in for protein

Meals for the last week of 2008



This is a simple meal plan for the week because I really didn’t know what to serve. I am still recovering from all the holiday festivities. I have no appetite for anything, which makes meal planning difficult. I am just trying to keep it simple, mostly healthy, inexpensive and kid friendly.

Meals for the last week of 2008

Sunday: Pizza and salad with family
Monday: Left over buffet night
Tuesday: Some kind of salad as the main course
Wednesday: Something special for New Year’s Eve. I just don’t know what. Growing up my family would have appetizers all night as we counted down the hours and minutes to the new year.
Thursday: Chicken cacciatore served with brown rice and a dinner salad
Friday: Soup and salad with homemade bread
Saturday: A freezer meal
